Why are some current fields “/”?

A reliable value requires current duration, repetition, connector, conductor and thermal test conditions; unsupported figures are not published.

How is flight time estimated?

Use a representative mission profile and loaded power data, then include reserve for landing and battery aging.

Can connectors and voltage be customized?

Yes. The electrical interface, wiring, connector, dimensions and protection are defined for the target aircraft.
